Colombia ‘Honey’ Nariño is a light-medium roast with red-fruit sweetness and a familiar Colombian heavy body. “Most coffees from Colombia are processed using the traditional washed method. This lot, however, goes through a more complex honey process that involves leaving the bean to dry in its mucilage for 20-45 days, using the heavy, cold winds of the region to help promote an even drying process”

I was very excited to give this coffee a try and it did not disappoint. Roasted by Yellow Dog Roasters (a fellow classmate/teammate of mine through School), this coffee has a wonderful flavor profile and works well with several brewing methods (pour over, aeropress, French press). As long as this coffee is available I will be buying it, supporting local roasters and local homesteaders living life meaningfully and sustainability. Cheers to early mornings with Rise and Pine!
