Sweet, citrusy and woodsy. Resinous, but honey-like, this Pinecone Syrup is literally the Pine Barrens in a bottle.
Also known as Mugolio, the syrup was born in the Italian Alps, from the Mugo Pine. Young cones are collected in the spring and packed in sugar. Over time, maceration happens as the sugar pulls moisture from inside the cones. The longer the maceration, the more complex the flavor.
Forage. Macerate. Wait.
Drizzle on sweets and cheeses. Stir into drinks and creamy pasta dishes, but don’t waste it on a pancake.
An immune-booster too, a spoonful would be helpful for easing coughs and aiding digestion.
